Dixie Hen House Eggplant - cooking recipe

Ingredients
    3 large eggplant
    1/2 lb. spicy bulk sausage
    3 green onions, chopped
    1 c. onions, chopped
    1 c. celery, chopped
    1 pkg. cornbread stuffing mix
    1/2 tsp. pepper
    1/2 tsp. salt
    2 c. grated Cheddar cheese
Preparation
    Peel eggplant and dice.
    Cook in salted water until just tender.
    Drain and set aside.
    Cook sausage in skillet until well done.
    Drain on paper towels.
    Saute green onions, onions and celery in skillet until transparent.
    Prepare stuffing mix according to package directions.
    Combine eggplant, sausage, onion mixture, salt, pepper and stuffing mix.
    Transfer to a shallow baking dish.
    Top with cheese.
    Bake until cheese is melted. Makes 12 servings.
