Carrot Soup - cooking recipe

Ingredients
    1 medium onion, sliced
    2 Tbsp. margarine
    4 carrots, sliced
    1 stalk celery with leaves, sliced
    2 c. water
    3 pkg. Herb-Ox instant broth and seasoning (chicken flavor)
    1 tsp. salt
    3/4 c. half and half
    pepper to taste
Preparation
    Saute onion in margarine until soft.
    Place onion in saucepan with carrots, celery, water and Herb-Ox.
    Cover and simmer 15 minutes.
    Pour into blender and blend 10 seconds.
    Add salt, pepper and half and half.
    Cover and blend until smooth.
    Serve immediately or refrigerate and reheat to serve.
    Serves approximately 6.
