Zucchini Cake - cooking recipe
Ingredients

1/2 c. butter or oleo, softened
1 c. sugar
3 eggs
1 tsp. vanilla
2 c. shredded zucchini
2 Tbsp. grated orange peel, divided
1/2 c. plus 2 Tbsp. orange juice, divided
2 1/4 c. flour
1 Tbsp. baking powder
1 tsp. ginger
3 Tbsp. powdered sugar
Preparation

Cream the butter and sugar.
Beat in eggs and vanilla.
Stir in zucchini and 1 tablespoon grated orange peel. Stir dry ingredients together.
Alternately stir in the flour mixture with 1/2 cup orange juice until blended.
Pour into a
greased and floured Bundt pan.
Bake at 350\u00b0 for 55 to 65 minutes or until a toothpick comes out clean.
Cool on wire rack for 15 minutes. Remove from pan. Cool for 45 minutes.
