Easy Potato Rolls(Yield: 45 Rolls) - cooking recipe

Ingredients
    2/3 c. sugar
    2/3 c. shortening (butter flavor Crisco)
    1 c. mashed potatoes
    2 1/2 tsp. salt
    2 eggs
    2 (1/4 oz. each) pkg. active dry yeast
    1 1/3 c. warm water, divided
    6 to 6 1/2 c. all-purpose flour
Preparation
    In large mixing bowl, cream sugar and shortening.
    Add potatoes, eggs and salt.
    In small bowl, dissolve yeast in 2/3 cup warm water; add to cream mixture in large bowl.
    Beat in 2 cups of flour and remaining water.
    Add remaining flour to form a soft dough.
    Shape into ball (do not knead).
    Place in greased bowl; turn once to grease top.
    Cover and let rise in warm place until double, about 1 hour.
    Punch down; divide into thirds.
    Shape each portion into 15 balls and arrange in 3 greased 9-inch round baking pans.
    Cover and let rise until double, about 30 minutes.
    Remove from pans and cool on racks.
