New Orleans Shrimp Creole - cooking recipe

Ingredients
    1/4 c. oleo or butter
    3/4 c. chopped onions
    2 cloves garlic, minced
    1/4 c. chopped green pepper
    2 c. sliced celery
    1 (13 oz.) can tomatoes
    3 Tbsp. brown sugar
    1 1/4 tsp. salt
    1/8 tsp. pepper
    2 bay leaves
    2 Tbsp. lemon juice
    1 1/2 lb. cooked shrimp
    3 c. rice, cooked
Preparation
    In skillet with butter brown onions, garlic, green pepper and celery.
    Cook uncovered about 20 minutes (until tender).
    Add tomatoes, brown sugar, salt, pepper and bay leaves.
    Simmer 15 minutes.
    Add lemon juice and shrimp.
    Cover and simmer 6 to 8 minutes.
    Serve over rice.
    Serves 4 to 6. Easy and good.
