Fried Spinach - cooking recipe

Ingredients
    2 lb. fresh leaf spinach
    1 T. peanut, sesame or garlic oil
    1 t. salt
    2 T. soy sauce
Preparation
    Wash spinach thoroughly and drain off excess water. Heat oil in a large wok or skillet. Add spinach and fry over fierce heat for 1 minute, stirring all the time with a chop stick, until spinach softens. Add salt and soy sauce, mix well and cook gently for another minute until spinach is tender and very bright green. Remove from wok and serve immediately. Makes 4 servings.
