"Rizogalo" Rice Pudding - cooking recipe

Ingredients
    1/3 c. rice
    1/2 c. water
    4 c. milk
    1/2 c. sugar
    1/2 tsp. salt
    1 tsp. vanilla
    cinnamon
Preparation
    Combine rice and water and boil until water is almost absorbed.
    Add milk; simmer until rice is tender, about 25 minutes.
    Add sugar and simmer until thick; remove from heat.
    Add salt and cook over low heat about 2 minutes, stirring constantly. Add vanilla.
    Pour into pudding dishes; sprinkle with cinnamon. Serves 6.
