Cajun Beans And Rice - cooking recipe

Ingredients
    2 c. kidney beans
    2 tsp. chopped parsley
    4 c. water
    5 strips bacon, chopped
    cayenne pepper to taste
    1 lb. or more smoked sausage
    5 cloves garlic
    1 ham hock
    2 large onions, chopped
    salt and pepper to taste
    3 bay leaves
Preparation
    Soak bean overnight and drain. Fry bacon and chop up.
    Add onions and garlic to same pan.
    Saute until golden brown.
    Add remaining ingredients and bring to a boil.
    Cover.
    Reduce heat and simmer for 3 hours.
    Add hot water if needed.
    Serve over rice.
