Buttermilk Pancakes - cooking recipe

Ingredients
    2 eggs
    2 c. buttermilk
    2 Tbsp. sugar
    1 tsp. vanilla
    2 tsp. baking powder
    1 tsp. baking soda
    1 tsp. salt
    4 Tbsp. cooking oil or melted butter
    2 c. flour
Preparation
    Take turns holding the mixer until eggs are fluffy.
    Add the rest of the ingredients and mix until smooth, but do not overmix. Grease hot griddle with shortening.
    Pour batter to make 4 inch pancakes.
    Cook until puffed, turn and cook other side until golden brown.
    We like to cut them into shapes and spread butter and jelly.
