Ratatouille - cooking recipe
Ingredients

1 small eggplant, unpeeled and diced
2 medium zucchini, unpeeled and diced
1 green pepper, chopped
2 medium onions, chopped
3/4 c. olive oil
6 tomatoes, quartered
1 tsp. salt
1 tsp. fresh basil
1/2 tsp. pepper
1 c. grated Parmesan cheese
Preparation

Salt and drain eggplant on paper towel for 20 minutes.
Saute eggplant, zucchini, pepper and onions in olive oil until lightly browned.
Stir in tomato, salt, basil and pepper. Transfer to a casserole dish.
Bake at 325\u00b0 for 1 1/2 hours or cook on top of stove in heavy pot.
Top with cheese, bake another half hour.
