Sharp Cheddar Muffins - cooking recipe
Ingredients

1 1/2 c. unbleached white flour
1/2 c. cornmeal
1 Tbsp. baking powder
3/4 tsp. sea salt
1 egg
1 c. whole milk
1/4 c. melted butter
1 1/2 c. sharp (extra sharp) Cheddar cheese
generous pinch ground red pepper
Preparation

Preheat oven to 425\u00b0.
Grease 12 muffin cups.
Mix flour, red pepper, cornmeal, baking powder and salt.
Beat egg, milk and butter separately and stir into dry ingredients only until just moistened.
Lightly stir and fold in 1 cup of the cheese.
Spoon into muffin cups and top with remaining 1/2 cup of cheese.
Bake 14 to 16 minutes until golden brown.
Serve piping hot.
