Schwabisches Sauerkraut(Swabian Style Kraut) - cooking recipe

Ingredients
    2 lb. fresh sauerkraut
    2 or 3 apples, peeled and sliced
    1 large onion, sliced
    2 Tbsp. butter or drawn-out pork fat
    1/2 tsp. crushed juniper berries or caraway seed
    1 tsp. sugar
    1 raw potato, grated
    2 c. water or white wine
    1/2 tsp. salt or to taste
Preparation
    Rinse sauerkraut with warm water, drain well.
    Saute the apples and onion in butter or pork fat until soft.
    Add juniper or caraway, sugar and the rinsed kraut.
    Simmer, covered, 1/2 hour. Add potato, water or wine and salt.
    Continue cooking until sauerkraut is tender to your taste (about 1 hour longer).
    Makes 6 servings.
