Cauliflower Casserole - cooking recipe

Ingredients
    2 carrots, shredded
    1/4 c. butter or margarine, divided
    1 can cream of mushroom soup
    1 large cauliflower, broken into flowerets
    1 medium onion, chopped
    1 1/2 c. herb-seasoned stuffing mix, divided
    1/4 c. sour cream
    vegetable cooking spray
Preparation
    Saute carrots and onion in 2 tablespoons butter in a large saucepan until tender.
    Stir in 1 cup stuffing mix, soup and sour cream.
    Remove from heat.
    Cook cauliflower in boiling water 10 minutes or just until tender.
    Add to soup mixture.
    Pour into an 8-inch square baking dish, which has been coated with cooking spray.
    Combine remaining 2 tablespoons butter and 1/2 cup stuffing mix; sprinkle on top of casserole.
    Bake at 350\u00b0 for 25 minutes.
    Serves 6 to 8.
