Grandma Spalding'S Lemon Pie - cooking recipe

Ingredients
    1 1/2 c. sugar
    1/3 c. cornstarch
    1 1/2 c. hot water
    3 eggs yolks, beaten
    3 Tbsp. butter
    juice of 1 lemon
    grated rind of 1 lemon
    egg white
    2 (9-inch) pie shells (one for bottom and one for top), baked
Preparation
    Mix sugar and cornstarch in saucepan.
    Stir in hot water gradually and cook until thick.
    Add to this mixture the egg yolks (beaten); stir in gradually and cook for 1 minute.
    Blend butter, lemon juice and grated lemon rind into the hot mixture.
    Beat egg white until frothy and fold gently into the lemon mixture.
