Lemon Rice Pilaf - cooking recipe

Ingredients
    5 Tbsp. olive oil
    1 1/2 c. minced onion
    3 c. long grain white rice
    3 (14 1/2 oz.) cans chicken broth
    1/2 c. fresh lemon juice
    1 1/2 Tbsp. lemon peel
    3/4 tsp. ground pepper
Preparation
    Heat oil in heavy large saucepan over medium heat. Add onion and saute until tender, about 10 minutes.
    Add rice and saute for 2 minutes. Add remaining ingredients and bring to a boil, stirring occasionally. Reduce heat to low.
    Cover and cook until rice is tender and liquid is absorbed, about 20 minutes. Remove from heat and let stand, covered, for 5 minutes.
    Season to taste with salt. Makes 6 servings.
