Zucchini Bread - cooking recipe
Ingredients

3 eggs, beaten
2 c. sugar
3 tsp. cinnamon
1 tsp. salt
1 c. oil or 1 stick margarine and 1/2 c. shortening
1/2 tsp. baking soda
1 tsp. baking powder
3 c. all-purpose flour
2 c. ground or grated zucchini
1 c. chopped nuts
1 tsp. vanilla
Preparation

Add sugar, cinnamon and salt to beaten eggs and mix well.
Add oil.
Combine baking soda, baking powder and flour and add to mixture.
Fold in zucchini, nuts and vanilla.
Divide batter into 2 (9-inch) loaf pans.
Bake at 350\u00b0 for 1 hour.
Will freeze indefinitely.
