Geri'S Zucchini Bread - cooking recipe

Ingredients
    3 eggs, beat until frothy
    2 c. sugar
    1 c. oil
    1 Tbsp. vanilla
    2 c. loosely packed, coarsely grated zucchini
    2 c. sifted flour
    1 Tbsp. cinnamon
    1 tsp. baking soda
    1/4 tsp. baking powder
    1 c. chopped walnuts (fold in)
Preparation
    Beat first 4 ingredients until thick and lemon colored.
    Mix in next 5 ingredients and fold in walnuts.
    Pour into 2 oiled and floured 8-inch loaf pans.
    Bake at 350\u00b0 for 1 hour.
    Let cool in pans 10 minutes and then turn out on racks.
