Ingredients

1 1/4 c. flour
2 Tbsp. sugar
2 tsp. baking powder
3/4 tsp. salt
1 egg, slightly beaten
3 Tbsp. oil
1 c. applesauce
1 c. milk, 1/3 c. more for thinner pancakes
2 tsp. cinnamon
sprinkle of nutmeg (optional)
Preparation

Mix dry ingredients in large bowl.
In smaller bowl, mix egg, milk and oil together, then add to flour mixture.
Add applesauce and stir until moistened.
Cook on heated griddle over medium-high heat, slightly oiled, until bubbly and bubbles are bursting.
Turn and cook until underside is golden.
Serve with hot syrup.
Makes 12 (4-inch) pancakes.
