Ingredients

1/2 c. uncooked enriched long grain white rice (not instant)
3 c. boiling water
1/2 tsp. salt
1 (14 oz.) can sweetened condensed milk
1/2 c. raisins (if desired)
1/4 c. butter or margarine
1 Tbsp. vanilla
Preparation

In top of double boiler, combine rice, boiling water and salt. Cook over medium heat about 40 minutes or until rice is tender. Do not drain.
Stir in condensed milk and butter.
Cook, stirring frequently, until slightly thickened, about 20 minutes.
Remove from heat; add raisins (which have been plumped up in hot water and then drained before adding).
Add vanilla.
Serve warm or cold.
Serves 6 to 8.
