Party Chicken Salad - cooking recipe
Ingredients

2 c. coarsely diced, cooked chicken breasts
2 Tbsp. lemon juice
1/2 tsp. salt
1 c. sliced celery
1 c. seedless white grapes
2 hard-cooked eggs, chilled and chopped
1/2 c. mayonnaise
1/4 c. halved or slivered blanched almonds, roasted
Preparation

Cook the chicken in salted water.
Cool and dice.
Sprinkle chicken with lemon juice and salt.
Chill for several hours.
Add celery, grapes, chopped eggs, mayonnaise and almonds.
Toss lightly.
Season salad with salt to taste.
Serve on lettuce leaf or in lettuce lined bowl.
Serves 4 to 5.
