Beef Stroganoff - cooking recipe

Ingredients
    2 lb. beef tenderloin, cut into 1-inch cubes
    2 Tbsp. flour
    2 Tbsp. shortening
    1 Tbsp. tomato paste
    2 c. beef broth
    1 tsp. cornstarch
    salt and pepper to taste
    1 tsp. paprika
    pinch of cayenne pepper
    4 medium onions, sliced
    1 c. mushrooms, sliced
    1 c. sour cream
Preparation
    Dredge meat with flour; sear in hot fat in large heavy skillet.
    Add paprika; stir so meat is colored.
    Remove meat.
    Add onions, cook over moderate heat until soft.
    Add tomato paste; replace meat.
    Add beef broth.
    Cook or bake, covered, until meat is done (15 minutes if tenderloin is used; 2 hours for less tender meat, such as round steak).
    Season to taste.
    Mix cornstarch in cold water.
    Add to meat mixture.
    Simmer until sauce is smooth and thickened.
    Turn off heat.
    Add some of the hot sauce to sour cream, then stir sour cream into remaining sauce.
    Serve with wide noodles.
