Ingredients

2 (16 oz.) cans chunky mixed fruit in juice or lite syrup
2 Tbsps. brown sugar
1 Tbsp. cornstarch
1/2 tsp. curry powder
1/2 tsp. dry mustard
1/2 c. small pitted prunes
1/2 c. dried apricots
2 Tbsps. chopped peanuts, if desired
Preparation

Drain fruit, reserving all liquid in a saucepan.
Set fruit aside.
Mix brown sugar, cornstarch, curry powder and dry mustard with reserved liquid until well-blended.
Stir in prunes and apricots.
Cook over medium heat, stirring frequently, until mixture boils and thickens.
Add drained fruit.
Continue cooking, stirring occasionally, until mixture is just heated through.
Serve immediately; garnish with peanuts, if desired.
Makes 4 servings each with 162 calories, less than 1 g. fat and 0 mg. cholesterol.
