Company Carrots - cooking recipe

Ingredients
    2 lb. peeled carrots
    boiling salted water
    1/4 c. cooking liquid from carrots
    1/2 c. mayo
    1 Tbsp. minced onion
    1 Tbsp. horseradish
    1/4 c. fine bread crumbs
    2 Tbsp. oleo
    paprika
    chopped fresh parsley
    salt and pepper
Preparation
    Cook carrots in salted water until tender.
    Save 1/4 cup cooking liquid.
    Cut carrots lengthwise.
    Combine 1/4 cup cooking liquid with mayo, onion, horseradish, salt and pepper.
    Pour over carrots.
    Sprinkle crumbs on top.
    Dot with oleo, paprika and parsley.
    Cook uncovered for 20 minutes.
