Banana Bran Muffins - cooking recipe
Ingredients

3 c. all-purpose flour
3/4 c. whole wheat flour
1/2 c. unprocessed oat bran, uncooked
2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1 tsp. ground cinnamon
1 egg
3/4 c. firmly packed brown sugar
1 1/3 c. raisins or chopped nuts
1/3 c. vegetable oil
1 tsp. vanilla extract
1 1/3 c. mashed ripe bananas
Preparation

Combine first 7 ingredients in a large bowl, make a well in center of mixture; set aside.
Combine egg and brown sugar in a medium bowl.
Beat at medium speed until smooth.
Add bananas, raisins, oil and vanilla.
Beat well.
Add to flour mixture, stirring just until dry ingredients are moistened.
Spoon batter into greased muffin pans, filling 2/3 full.
Bake at 375\u00b0 for 20 to 25 minutes.
Remove from pan immediately.
Let cool on wire rack.
Makes 1 dozen.
