Walnut Fruit Pie - cooking recipe

Ingredients
    1 c. sugar
    1/2 c. butter, softened at room temperature
    2 egg yolks
    1 tsp. grated orange rind
    1 Tbsp. fresh orange juice
    1 c. chopped walnuts
    1 c. shredded coconut (not fresh or frozen)
    1/2 c. raisins
    2 egg whites
    1 (9-inch) unbaked pie crust
Preparation
    Preheat oven to 350 degrees. In large bowl, combine sugar, butter, egg yolks, orange rind and orange juice. Beat until well mixed. Stir in walnuts, coconut and raisins. Beat the egg whites until stiff. Fold into fruit/nut mixture. Pour into unbaked pie crust. Bake for 45 to 50 minutes or until top is lightly browned and the filling is set. Cool completely before slicing.
