Chunky Orange-Lemon Salsa - cooking recipe

Ingredients
    1/4 c. red wine vinegar
    1/2 c. sliced scallions
    1 Tbsp. honey
    1 (16 oz.) can whole tomatoes, drained and coarsely sliced
    2 seedless oranges or tangerines, diced
    1 tsp. lemon juice
    1 jar pimientos, sliced
Preparation
    In a small nonstick saucepan, heat the vinegar over medium heat.
    Add the scallions; cook for 1 minute.
    Mix in the honey; cook for 1 minute.
    Remove from heat.
    Stir in the tomatoes, oranges (or tangerines), lemon juice and pimientos.
    Heat briefly. Refrigerate for up to 1 week.
    Yields 2 cups.
