Stuffed Mushrooms - cooking recipe
Ingredients

12 large mushrooms
2 Tbsp. butter
1 medium onion, finely chopped
1/2 c. pepperoni, diced
1/4 c. green pepper, chopped
1/4 tsp. oregano
1 small clove garlic, minced
1/2 c. crushed Ritz crackers (approximately 12)
3 Tbsp. grated Parmesan cheese
1 Tbsp. parsley
1/2 tsp. salt
1/8 tsp. pepper
1/3 c. chicken broth
Preparation

Wash mushrooms. Remove stems and finely chop. Drain mushroom caps on paper towel. Melt butter in skillet. Add onion, pepperoni, green pepper, garlic and chopped mushroom stems.
Cook until tender, not brown. Add cracker crumbs, cheese, parsley, salt, pepper and oregano.
Mix well. Stir in chicken broth. Spoon stuffing into caps, rounding tops.
Place caps in shallow baking dish with 1/4-inch water covering bottom of baking dish. Bake, uncovered, at 325\u00b0 for about 25 minutes. Enjoy!
