Zucchini Bisque - cooking recipe

Ingredients
    1 medium onion
    1/2 c. butter or margarine
    1 1/2 lb. shredded zucchini
    2 1/2 c. chicken stock
    1 c. light cream
    1/8 tsp. nutmeg
    1/2 tsp. basil
    1/2 tsp. salt
    1/2 tsp. pepper
Preparation
    Saute onion and butter or margarine.
    Simmer zucchini and chicken stock for 15 minutes (covered).
    Puree 1/2 of zucchini mixture with 1/2 of onion mixture while slowly adding cream and spices.
    (Repeat with other half.)
    Serve hot or cold.
    Also great with cauliflower.
