Eggplant Casserole - cooking recipe

Ingredients
    2 c. boiled eggplant
    2 lb. ground beef
    1 c. saltine cracker crumbs
    1 (8 oz.) can tomato sauce
    1 small onion, chopped
    1 small green pepper, chopped
    salt and pepper to taste
    1 tsp. basil leaves
    2 c. shredded Cheddar cheese
Preparation
    Brown ground beef, onions and peppers until onion and peppers are tender.
    Drain.
    Add eggplant, cracker crumbs, tomato sauce, salt, pepper, basil leaves and half of the cheese.
    Pour into a baking dish.
    Top with remaining cheese and bake in a 350\u00b0 oven for 30 minutes or when cheese is a golden brown.
