Cheese Enchiladas - cooking recipe

Ingredients
    1 chopped onion
    2 Tbsp. oil
    1 Tbsp. flour
    4 Tbsp. chili powder
    1 qt. tomato juice
    1 lb. Colby cheese
    1/2 chopped onion
    corn tortillas
Preparation
    Saute onion in oil.
    Add flour and chili powder.
    Make a paste. Add tomato juice.
    Simmer 30 minutes.
    Grate cheese; add onion. Soften corn tortillas in sauce.
    Fill with cheese and fold in half. Arrange in 9 x 13-inch pan.
    Pour remaining sauce on top.
    Sprinkle with shredded cheese.
    Bake at 350\u00b0 for 30 minutes.
    Makes 18 enchiladas.
