Granny'S Squash And Tomato Casserole - cooking recipe

Ingredients
    1 squash, cut in small pieces (zucchini or other squash)
    3 Tbsp. butter
    3 Tbsp. flour
    3 large tomatoes, peeled and chopped or 2 c. canned tomatoes
    1 egg, beaten
    1 green pepper, chopped
    1 onion, chopped
    cracker crumbs
    grated cheese for topping
Preparation
    Boil squash until tender, drain and set aside.
    Melt butter and blend in flour, tomatoes, pepper, onion and egg.
    Season to taste with salt and pepper.
    Simmer for five minutes.
    Put squash into buttered dish (9 x 13-inch).
    Pour tomato mixture over squash and sprinkle cracker (or bread) crumbs over top.
    Add grated cheese for topping.
    Bake at 350\u00b0 for 30 minutes.
