Zucchini Provencal - cooking recipe

Ingredients
    1 large onion, sliced
    1 clove garlic
    2 Tbsp. olive oil
    2 lb. zucchini squash, cut up
    4 cut up tomatoes (may use canned)
    1/2 chopped green pepper
    salt and pepper to taste
    minced parsley to taste
    Parmesan cheese to taste
Preparation
    In large skillet, saute onion and garlic in oil.
    Add zucchini, tomatoes, green pepper, salt and pepper to taste.
    Stir and let simmer until zucchini is cooked, firm and not mushy.
    Place in serving dish and garnish with parsley and Parmesan cheese.
