Spring Surprise Pudding - cooking recipe

Ingredients
    3 c. rhubarb, cut
    1/4 c. water
    1 c. sugar
    1 c. flour
    1 tsp. baking powder
    1/4 tsp. salt
    1/3 c. shortening
    2/3 c. sugar
    1 tsp. grated orange rind
    1 egg
    1/2 tsp. vanilla
    2/3 c. milk
Preparation
    Put
    rhubarb
    and
    water
    in
    saucepan\tand
    cook until tender, about
    10
    or 15 minutes.
    Add 1 cup sugar.
    Simmer 10 minutes
    longer.
    Sift together flour, baking powder and salt. Cream
    together
    shortening and sugar.
    Add grated orange rind and egg
    and beat until light and fluffy.
    Add vanilla to milk and add
    to
    creamed
    mixture alternately with flour mixture. Stir until smooth.
    Pour batter into greased 8 x 8-inch square pan. Pour
    bubbling
    hot rhubarb sauce over the batter.\tBake at 350\u00b0 for
    about\t45
    minutes.
    Serve with whipped topping. Serves 6.
