Phoney Abalone - cooking recipe
Ingredients

4 small chicken breasts (boneless and skinless)
1 (8 oz.) bottle clam juice
salt and pepper to taste
2 c. crackers, crumbled (Ritz or saltines)
butter and oil for frying
Preparation

Place chicken breasts between layers of wax paper and pound flat.
Marinate in clam juice 3 to 6 hours, turning often.
Salt and pepper, then roll in cracker crumbs.
Saute in equal parts oil and butter until a golden brown.
Serves 2 to 4.
