Sweet Potato Bonbons - cooking recipe

3 lb. peeled and cooked sweet potatoes
1/4 c. (1/2 stick) butter
1/2 c. packed brown sugar
1 tsp. salt
1/2 tsp. grated orange rind
marshmallows, halved
1/4 c. butter
4 c. crushed corn flakes
pecans
Preparation

Mash sweet potatoes until light and fluffy. Add 1/4 cup butter, brown sugar, salt and orange rind; cool. Divide into 12 portions. Press each portion around a marshmallow half. Shape into a ball. Use 1/3 cup melted butter to coat the balls. Roll in crushed corn flakes, then top with a pecan. Place on lightly greased pan. Bake at 450\u00b0 for 7 to 8 minutes.
