Orange Glazed Sweet Potatoes - cooking recipe

2 lb. sweet potatoes
2/3 c. granulated sugar
1 c. orange juice
1/2 tsp. salt
1 Tbsp. cornstarch
2 Tbsp. oleo
Preparation

Preheat oven to 400 degrees. Peel sweet potatoes and cut into 3/4 inch pieces. Arrange in an ungreased 1 1/2 qt. casserole dish. In a
small saucepan, stir together sugar, cornstarch, salt and slowly stir in orange juice. Add oleo, cook stirring constantly until mixture thickens and boils. Then stir 1 minute. Pour hot mixture over sweet potatoes and bake 1 hour basting occasionally.
