Shanghai Shrimp - cooking recipe

Ingredients
    4 green onions, cut in 1-inch pieces
    1 tsp. minced ginger
    2 Tbsp. peanut or veggie oil
    1 lb. large shrimp, shelled and deveined
    1 c. chicken broth
    1 Tbsp. cornstarch
    1 (11 oz.) can mandarin oranges (undrained)
    1 (8 oz.) can sliced water chestnuts (undrained)
    hot cooked rice
Preparation
    Prepares in 15 minutes.
    Cook green onions and ginger in oil in skillet over medium-high heat for 2 to 3 minutes.
    Add shrimp; cook for 3 to 4 minutes.
    Blend cornstarch into chicken broth; stir into skillet with oranges and water chestnuts.
    Reduce heat; simmer, covered, until slightly thickened and heated through.
    Serve over rice.
    Makes 6 servings.
