Cucumber Canapes - cooking recipe

Ingredients
    1 c. cooked rice, cooled to room temperature
    1 large tomato, peeled and diced
    1/2 c. chopped parsley
    1/3 c. chopped green onions
    2 cloves garlic, minced
    3 Tbsp. plain nonfat yogurt or sour cream
    1 Tbsp. lemon juice
    1 Tbsp. olive oil
    1/4 tsp. ground white pepper
    2 to 3 large cucumbers, peeled
Preparation
    Combine rice, tomato, parsley, onions, garlic, yogurt or sour cream, lemon juice, oil and pepper in large bowl; cover and chill.
