Microwave Leek And Potato With Lemon Thyme - cooking recipe

Ingredients
    8 oz. leeks, trimmed, sliced and washed
    8 oz. potatoes, peeled and sliced
    salt
    ground black pepper
    2 Tbsp. chopped lemon thyme
    1/2 c. hot vegetable stock
Preparation
    Arrange the leeks and potatoes in a microwave-proof dish. Sprinkle each layer with salt, pepper and lemon thyme.
    Pour over the stock.
    Cover loosely and cook on High for 8 to 10 minutes until cooked.
