Ingredients

1/2 c. evaporated milk
1/2 c. fine dry bread crumbs
1 egg, beaten
1 tsp. minced onion
2 c. raw potatoes, grated
1 1/2 tsp. salt
bacon drippings or cooking oil
Preparation

Pour milk over bread crumbs; allow to soak until milk is absorbed.
Stir in egg, onion, potatoes and salt.
Heat bacon drippings on griddle or in frying pan.
Drop batter from tablespoon onto griddle and press out rather thin.
Cook slowly, until well browned.
Turn and brown other side.
Yields 5 to 6 servings.
