Zucchini Rounds - cooking recipe

Ingredients
    1/3 c. commercial biscuit mix
    1/4 c. grated Parmesan cheese
    salt and pepper to taste
    2 eggs, slightly beaten
    2 c. shredded, unpared zucchini
    2 Tbsp. butter or margarine, softened
Preparation
    In a bowl, combine biscuit mix, cheese, salt and pepper.
    Stir in eggs just until mixture is moistened.
    Fold in zucchini.
    For each round, drop 2 tablespoons of mixture in soft butter or margarine; fry 2 to 3 minutes on each side until brown.
