Suzie'S Date-Nut Muffins(Low-Fat) - cooking recipe

Ingredients
    8 oz. pitted chopped dates
    3/4 c. boiling water
    1/4 c. oil (canola)
    1/2 tsp. vanilla
    1 c. unsifted flour
    1/2 c. unsifted whole wheat flour
    1/2 c. brown sugar
    1/2 tsp. cinnamon
    1/2 tsp. baking soda
    1/2 c. chopped walnuts
Preparation
    In medium bowl, stir together dates, boiling water, oil and vanilla.
    In small bowl, mix flours, sugar, walnuts, cinnamon and baking soda.
    Add date mixture and stir until moistened.
    Makes 12 muffins.
    Bake at 375\u00b0 for 25 minutes.
    Freezes well.
