Ingredients

3 qt. beets
3 c. cider vinegar
2 c. sugar
1 c. brown sugar
2 c. water
1 Tbsp. salt
2 Tbsp. pickling spice
2 Tbsp. cinnamon
1 tsp. cloves
Preparation

Cook beets until tender; peel and cut into chunks.
Combine all other ingredients (put pickling spice in gauze and tie) and boil 5 minutes.
Add beet chunks; bring to boil and boil 8 to 10 minutes.
Put in sterile jars and seal at once.
Let stand 4 to 6 weeks before serving.
