Peach Bread - cooking recipe

Ingredients
    3 c. (about 1 1/2 lb.) peaches
    6 Tbsp. sugar
    2 c. all-purpose flour
    1 tsp. baking powder
    1 tsp. baking soda
    pinch of salt
    1 tsp. cinnamon
    1 1/2 c. sugar
    1/2 c. shortening
    2 eggs
    1 c. chopped pecans or walnuts
    1 tsp. vanilla
Preparation
    Plunge peaches into boiling water to blanch for 45 seconds. Remove and run under cold water.
    Skins will slip off easily. Slice into sections.
    Place the peaches and 6 tablespoons sugar in blender.
    Blend or process until pureed.
    Combine flour with all dry ingredients, except remaining sugar.
    Cream sugar and shortening.
    Add eggs, one at a time, mixing well.
    Add peach puree, nuts and vanilla, stir well.
    Add dry ingredients, mix well. Spoon batter into 2 well-greased and floured loaf pans (9 x 5 x 3-inch).
    Bake at 325\u00b0 for 1 hour or until toothpick comes out clean.
