Ingredients

2 eggs, separated
2 c. buttermilk or sour milk
2 c. flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
1/2 c. butter, melted
Preparation

Preheat waffle iron.
Place egg yolks in large mixing bowl and whites in small bowl.
To yolks, add buttermilk; beat well.
Add flour, baking powder, soda and salt.
Beat until smooth.
Stir in melted butter.
Beat egg whites until soft peaks form.
Fold into batter.
Bake in preheated waffle iron set at medium heat 5 or 8 minutes or until steaming stops and waffle is golden brown.
