Lemon Mousse Pie - cooking recipe

Ingredients
    1 envelope unflavored gelatin
    1/3 c. lemon juice
    1/3 c. water
    1 tsp. grated lemon peel
    5 to 6 drops yellow food coloring
    1 (8 oz.) pkg. cream cheese
    1 c. powdered sugar
    2 c. whipping cream, whipped
    1 cooked pie shell
    strawberries
Preparation
    In a small saucepan, combine gelatin, lemon juice and water. Let stand 1 minute.
    Stir over medium heat until dissolved.
    Stir in lemon peel and food coloring.
    In a small bowl combine cream cheese and sugar.
    Beat until smooth and fluffy.
    Gradually add the gelatin mixture.
    Blend well.
    Refrigerate about 15 minutes. Fold in the whipping cream.
    Spoon into cooked pie shell. Refrigerate about 1 hour.
    Garnish with strawberries.
    Store in refrigerator until ready to serve.
