Beef Enchilada Casserole - cooking recipe
Ingredients

2 lb. ground beef
1 pkg. taco seasoning
1 small onion, chopped
20 white corn tortillas
cooking oil
1/2 lb. grated Cheddar cheese
1/2 lb. grated Monterey Jack cheese
1 (7 oz.) can diced green chilies
2 cans enchilada sauce
1 can cream of mushroom soup
1 (15 oz.) can chili (no beans)
1/2 to 1 c. crushed tortilla chips
Preparation

Brown ground beef with onion and taco seasoning; drain excess fat and set aside.
In a separate small skillet, precook just to soften each tortilla by using tongs to flip and heat each side in a small amount of oil.
Place tortillas on paper towels to drain excess oil until needed.
