Mexican Macaroni And Cheese - cooking recipe

Ingredients
    4 Tbsp. butter
    3 Tbsp. flour
    2 c. milk
    1/2 lb. Velveeta cheese, cubed
    4 Tbsp. onion, chopped
    1 tsp. salt
    1/4 tsp. pepper
    1 c. canned tomatoes
    2 c. cooked macaroni (about 1 1/2 c. raw)
Preparation
    Combine butter and flour over medium heat.
    Make a smooth paste.
    Gradually add milk.
    Simmer for 2 or 3 minutes.
    Add cheese.
    Simmer until cheese melts.
    Remove from heat.
    Add green pepper, onion, salt, pepper, tomatoes and macaroni.
    Mix lightly. Pour into baking dish.
    Bake at 325\u00b0 for 1/2 hour after mixture begins to boil, about 45 minutes total.
