Moist Carrot Cake - cooking recipe
Ingredients

3 eggs, beaten
3/4 c. vegetable oil
3/4 c. skim milk
2 c. sugar
2 tsp. vanilla
2 c. flour
2 tsp. cinnamon
2 tsp. baking soda
1 (8 oz.) crushed pineapple, undrained
2 c. grated carrots
1 c. chopped nuts
1 c. flaked coconut
Preparation

Combine eggs, oil, milk, sugar and vanilla; mix well.
Combine flour, cinnamon, baking soda and salt; stir into egg mixture. Stir in pineapple, carrots, nuts and coconut.
Pour into greased and floured 13 x 9 x 2-inch baking pan.
Bake at 350\u00b0 for 50 to 55 minutes or until cake tests done.
Do not overbake.
