Vegetable Puffs - cooking recipe

Ingredients
    2 eggs
    1/4 tsp. pepper
    3 Tbsp. milk
    1 c. cold mashed potatoes
    1/2 c. flour
    1 c. cooked or canned whole kernel corn
    1 tsp. baking powder
    1 tsp. salt
    1 tsp. chopped parsley
Preparation
    Beat the eggs and milk together.
    Sift flour, baking powder, salt and pepper into eggs and milk.
    Beat until well mixed.
    Add mashed potatoes and beat again.
    Stir the well drained corn kernels in with spoon or rubber spatula along with chopped parsley.
    Drop by spoonful onto shortening which has been heated until an inch square of bread will brown in a minute (1 1/2-inches of shortening in pan).
    Each puff must be turned in a few minutes, so fry only 4 or 5 at a time.
